For that processor a gtx295 may not be worth it as you will not use its full potential.
I'd suggest a GeForce gtx 285 or gtx 275 if you want really high performance. These cards are EXPENSIVE though. If you prefer ATI you'll want to look at the 4870 X2
Also an important piece of hardware you didn't specify is your Power supply. You will need at least a 600 watt PSU for any of the cards I specified, probably more.

Also I'm not really sure what this means. If we aren't addressing gaming, then honestly any mid range video card should do the trick.
